2 tablespoons olive oil

1/2 cup pure maple syrup

1 teaspoon ground cinnamon

2 medium apples, cored and sliced (Granny Smith or Honeycrisp preferred for a nice tartness)

1 large onion, thinly sliced

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon apple cider vinegar

1/2 cup chicken broth (optional, for added depth of flavor)

Chopped fresh parsley for garnish (optional)

Sear the Pork Chops: Begin by heating the olive oil in a large skillet over medium-high heat. Season both sides of the pork chops generously with salt and pepper. Once the oil shimmers, carefully add the pork chops to the skillet. Sear them for about 3-4 minutes on each side, or until they develop a rich golden-brown crust. Once seared, remove the pork chops from the skillet and set them aside on a plate.

    Prepare the Slow Cooker: In your slow cooker, add the apple cider, pure maple syrup, ground cinnamon, ground nutmeg, sliced apples, thinly sliced onion, minced garlic, chopped rosemary, apple cider vinegar, and chicken broth (if using).
