Ingredients

1 cup full-fat coconut milk (for added creaminess)

1 cup almond milk (or any milk of your preference)

1/4 cup chia seeds

1/3 cup maple syrup (use honey for a non-vegan alternative)

2 tablespoons high-quality matcha powder

1 teaspoon pure vanilla extract

A pinch of sea salt

Fresh fruit and shredded coconut for garnish (optional)

Instructions

In a medium bowl, combine the full-fat coconut milk, almond milk, and maple syrup. Whisk them together thoroughly until the mixture is well blended.

Add the matcha powder, vanilla extract, and a pinch of sea salt to the bowl. Continue whisking until the matcha is completely dissolved and the mixture is smooth and vibrant in color.

Gently fold in the chia seeds, making sure they are evenly distributed throughout the mixture. Allow it to rest for 5 minutes, then whisk it again to break up any clumps that may have formed.

Cover the bowl with plastic wrap or spoon the mixture into individual serving cups. Place in the refrigerator for a minimum of 4 hours, or overnight for optimal thickening. This resting period enables the chia seeds to absorb the liquid and transform into a delightful pudding.

Once the pudding has set, give it a light stir to create a smooth texture before serving.

Serve chilled, adorned with fresh fruits such as mango or mixed berries, along with a sprinkle of shredded coconut for an added touch of flavor and crunch.

Prep Time: 10 minutes | Total Time: 4 hours and 10 minutes | Servings: 4

Presentation Tips: For an attractive presentation, layer the pudding in clear glasses to showcase its beautiful green color, and garnish each serving with vibrant fruit and a few coconut flakes on top.
