Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup carrots, diced

1 cup frozen peas

1 small onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 tablespoons olive oil

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Sweet Potatoes: Start by placing the diced sweet potatoes into a large pot and covering them with water. Bring the water to a boil and cook the sweet potatoes until tender, which should take about 15 minutes. Once cooked, drain the potatoes and mash them to a smooth consistency using a fork or a potato masher. Set the mashed sweet potatoes aside for assembly.

Cook the Turkey Filling: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing for about 2-3 minutes until they are translucent and fragrant. Next, introduce the ground turkey into the skillet, cooking until it is browned throughout. Use a spatula to break the meat apart as it cooks.

Add Vegetables and Seasonings: To the cooked turkey mixture, add the diced carrots and frozen peas. Pour in the chicken broth, and stir in the Worcestershire sauce along with the dried thyme and rosemary. Season the mixture generously with salt and pepper. Allow this mixture to simmer for approximately 10 minutes to ensure the flavors meld together and the sauce thickens slightly.

Assemble the Pie: Preheat your oven to 400°F (200°C). Grease a baking dish to prevent sticking. Begin by evenly spreading the turkey and vegetable mixture on the bottom of the prepared baking dish. Next, layer the creamy mashed sweet potatoes over the turkey mixture, smoothing it out evenly with a spatula. If you desire, sprinkle the shredded cheddar cheese over the mashed sweet potatoes for a delicious, cheesy crust.

Bake: Carefully place the assembled pie in the preheated oven and bake for 20-25 minutes. The shepherd’s pie is done when the top is lightly browned and the cheese (if added) is melted and bubbly.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to cool for a few minutes. Before serving, garnish the pie with fresh chopped parsley for a pop of color and fresh flavor. Enjoy the warm and comforting tastes of your homemade Shepherd’s Pie!
