8 oz (about 2 cups) penne pasta

1 lb Italian sausage (pork or turkey), casing removed

1 medium onion, diced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with their juices

1 cup marinara sauce

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional for added heat)

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s hot and ready when it's time to bake.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil over high heat. Add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside.

      Cook the Sausage: Heat a large skillet over medium heat. Add the Italian sausage, breaking it up with a spatula. Cook for about 5-7 minutes, until the sausage is browned and crumbled. If there is excess grease, drain it from the skillet.

        Sauté the Vegetables: To the skillet with the cooked sausage, add the diced onion and the sliced red and yellow bell peppers. Sauté for about 4-5 minutes, stirring occasionally, until the vegetables are softened and fragrant. Mix in the minced garlic and continue cooking for an additional 1-2 minutes.

          Combine the Mixture: Pour in the diced tomatoes with their juices, marinara sauce, dried oregano, dried basil, and red pepper flakes (if using).
