Ingredients

1 cup ricotta cheese

1/4 cup unsalted butter, softened to room temperature

1 large egg

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves, chopped

1/2 teaspoon garlic powder

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese

1/4 cup milk (for brushing the tops)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Mix Wet Ingredients: In a large mixing bowl, combine the ricotta cheese, softened butter, and egg. Use a whisk or fork to mix until the mixture is smooth and homogenous.

Incorporate Herbs and Spices: To the ricotta mixture, add the finely chopped rosemary, thyme leaves, garlic powder, salt, and black pepper. Stir until everything is well distributed through the mixture.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and grated Parmesan cheese until evenly mixed and free of lumps.

Make the Dough: Gradually fold the dry ingredients into the wet mixture. Gently stir until the dough just comes together; it should still be slightly sticky. Be careful not to overmix, as this can lead to denser scones.

Form the Scones: Lightly flour a clean surface and turn the dough out onto it. Pat the dough into a circle about 1-inch thick. Using a sharp knife or a pizza cutter, slice the circle into 8 wedges.

Prepare for Baking: Transfer the cut scones to the prepared baking sheet, spacing them about an inch apart. Brush the tops of the scones with milk to help achieve a beautiful golden brown color during baking.

Bake: Place the baking sheet in the oven and bake for 20-25 minutes. The scones are ready when they are lightly golden and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the scones from the oven and allow them to cool for a few minutes on the baking sheet. Serve them warm with a pat of butter, or enjoy them plain as a delightful snack or side.
