1 cup sharp cheddar cheese, grated

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk (or 3/4 cup milk mixed with 1 tablespoon vinegar)

1 tablespoon honey (optional, for a hint of sweetness)

1 egg (for egg wash, optional)
