Ingredients

1 lb (450g) ground beef

2 large potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup beef broth

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

1 sheet refrigerated pie crust (or homemade)

1 egg, beaten (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it's hot enough for a perfect pie crust.

Cook the Potatoes: In a medium-sized pot, bring a generous amount of salted water to a boil. Add the diced potatoes and cook until they are fork-tender, approximately 10-15 minutes. Drain the potatoes carefully and set them aside to cool slightly.

Sauté the Aromatics: In a large skillet set over medium heat, add a splash of cooking oil. Once hot, sauté the finely chopped onion and minced garlic until the onions turn translucent and fragrant, about 3-4 minutes.

Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break it up with a spatula and cook until it's browned and no longer pink, around 5-7 minutes. Be sure to drain any excess fat that accumulates in the pan.

Combine Ingredients: After browning the beef, stir in the beef broth, Worcestershire sauce, dried thyme, paprika, and a good pinch of salt and pepper. Allow this mixture to come to a gentle simmer for about 5 minutes, letting it thicken slightly. Once thickened, fold in the cooked potatoes and frozen mixed vegetables, stirring until everything is evenly combined.

Assemble the Pie: On a lightly floured surface, roll out the pie crust until it's about the size of your 9-inch pie dish. Carefully transfer the crust into the dish. Pour the hearty beef and potato filling into the crust, spreading it evenly. Place another sheet of pie crust over the filling; seal the edges tightly to prevent sticking. Use a sharp knife to cut a few slits in the top crust to allow steam to escape while baking.

Add the Egg Wash: To achieve a beautifully golden crust, brush the top of the pie with the beaten egg. This will give it a lovely sheen once baked.

Bake the Pie: Place the assembled pie into the preheated oven and bake for approximately 30-35 minutes, or until the crust turns a rich golden brown and the filling is bubbling slightly.

Cool and Serve: Once your pie is baked to perfection, carefully remove it from the oven. Let it cool for about 10 minutes before slicing, allowing the filling to set slightly for easier serving. Enjoy your warm and savory hearty ground beef and potato pie!
