1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper (red or yellow), sliced into strips

1 cup snap peas, trimmed

1 carrot, cut into matchsticks (julienned)

2 green onions, chopped (green and white parts separated)

3 cloves garlic, minced

1 tbsp fresh ginger, minced

3 tbsp soy sauce (low-sodium preferred)

1 tbsp oyster sauce

1 tbsp sesame oil

1 tbsp vegetable oil (for cooking)

1 tsp cornstarch mixed with 2 tsp water (optional, for thickening)

Salt and pepper to taste

Cooked rice or quinoa (for serving)

Instructions
 

Prep the Ingredients: Gather all ingredients. Thinly slice the beef sirloin against the grain. Prepare the vegetables by cutting the broccoli into florets, slicing the bell pepper, trimming the snap peas, and julienning the carrot. Mince the garlic and ginger.

    Marinate the Beef: In a medium mixing bowl, combine the sliced beef with 1 tablespoon of soy sauce, along with a pinch of salt and pepper. Toss to coat the beef evenly and let it marinate for about 10 minutes while you prepare the vegetables.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over high heat until it shimmers, indicating it's hot enough for cooking.

        Cook the Beef: Add the marinated beef to the pan in a single, even layer. Allow it to sear without stirring for 2-3 minutes to develop a rich brown color. Then, use a spatula to break it apart and stir-fry for an additional 1-2 minutes until fully cooked. Transfer the beef to a plate and set aside.
