1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 cup broccoli florets

1 cup snap peas, trimmed

3 green onions, sliced (with white and green parts separated)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons low-sodium beef broth

1 tablespoon sesame oil

Salt and pepper to taste

Cooked rice or quinoa, for serving

Marinate the Beef: In a medium bowl, mix together the thinly sliced beef, soy sauce, oyster sauce, and cornstarch. Toss until each piece of beef is evenly coated. Allow the beef to marinate for at least 15 minutes to absorb flavors while you prepare the vegetables.

    Prepare the Vegetables: Wash and slice the bell peppers into strips, trim the snap peas, and cut the broccoli into small florets. Aim to keep all the vegetables roughly the same size to ensure they cook uniformly.

      Sauté the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is shimmering and hot, carefully add the marinated beef in a single, even layer.
