Instructions

Prepare the Watermelon Glaze:

    - In a blender, combine the cubed watermelon, honey (or maple syrup), lime juice, grated ginger, and a pinch of salt. Blend the mixture until it reaches a smooth consistency.

      - Transfer the blended mixture to a small saucepan and place over medium heat. Allow it to simmer for approximately 10-15 minutes, stirring occasionally, until the mixture thickens into a glaze-like consistency. Once done, remove from the heat and let it cool.

        Cook the Salmon:

          - Preheat your grill or a non-stick skillet over medium-high heat.

            - Drizzle the olive oil over the salmon fillets, ensuring they are well-coated. Season both sides generously with salt, black pepper, smoked paprika, and garlic powder.

              - Place the salmon on the grill or in the skillet. Cook for about 4-5 minutes on each side, or until the salmon is fully cooked and flakes easily with a fork. Once done, remove from heat and let the fillets rest for a couple of minutes.

                Assemble the Wraps:

                  - Using a fork, gently flake the cooked salmon into bite-sized pieces.

                    - Take a large lettuce leaf and place a generous portion of the flaked salmon in the center.

                      - Top the salmon with a few slices of cucumber and some julienned carrots for crunch.

                        - Drizzle a spoonful of the prepared watermelon glaze over the salmon and vegetables.

                          - Garnish with fresh cilantro or mint leaves. If you enjoy a bit of spice, add some sliced red chili on top.

                            Serve:

                              - Arrange the assembled wraps on a serving platter. Serve immediately and relish the fresh, vibrant flavors in each delightful bite!
