Creating the perfect biscuit topping is essential to the overall success of your Rustic Garlic Herb Chicken Cobbler. The texture of the biscuits should be light, fluffy, and slightly flaky, providing a beautiful contrast to the savory chicken filling. To achieve this, it’s crucial to handle the dough gently and avoid over-mixing. When you combine your dry ingredients with the wet ones, mix just until everything is incorporated. Overworking the dough can lead to tough biscuits, which is not what we want here.

Ingredients

For the Chicken Filling:

2 cups cooked chicken, shredded or chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup carrots, diced

1 cup green beans, chopped

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

For the Biscuit Topping:

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, cold and cubed

1 cup buttermilk

1 teaspoon garlic powder

1 tablespoon fresh chives, chopped

Instructions

Prepare the Filling:

    - In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing them until fragrant and the onion turns translucent, about 3-4 minutes.

      - Stir in the diced carrots and chopped green beans, cooking for an additional 5 minutes until they begin to soften.

        - Add the shredded chicken to the skillet along with the chicken broth, dried thyme, dried rosemary, salt, and pepper. Bring this mixture to a gentle simmer, allowing it to cook for 10 minutes for the flavors to meld. Once done, remove from heat and set aside.

          Make the Biscuit Topping:

            - Preheat your oven to 400°F (200°C).

              - In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. Add the cold, cubed butter. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

                - Pour in the buttermilk and carefully mix until just combined. Gently fold in the garlic powder and chopped chives, being cautious not to overwork the dough to ensure tender biscuits.

                  Assemble the Cobbler:

                    - Lightly grease a 9x13-inch baking dish. Pour the chicken filling evenly across the bottom of the dish.

                      - Using a spoon or your hands, drop generous spoonfuls of the biscuit dough over the chicken filling, aiming to cover as much of the filling as possible.

                        Bake:

                          - Place the baking dish into the preheated oven and bake for 25-30 minutes, or until the biscuit topping is beautifully golden brown and cooked through.

                            - After baking, let the cobbler cool for a few minutes before serving to allow it to set slightly.

                              Serve:

                                - Garnish warm servings with a sprinkle of fresh parsley. This hearty rustic garlic herb chicken cobbler pairs wonderfully with a side salad or some crusty bread for a complete meal!
