Instructions

Preheat the Oven:

    - Begin by preheating your oven to 425°F (220°C) to ensure it’s hot and ready for roasting.

      Prepare the Vegetables:

        - In a large mixing bowl, combine the diced red and yellow bell peppers, sliced zucchini, diced red onion, and corn.

          - Drizzle the mixture with olive oil, and then sprinkle smoked paprika, ground cumin, garlic powder, salt, and pepper over the top. Toss everything together thoroughly until all the vegetables are coated evenly with the oil and spices.

            Roast the Vegetables:

              - Spread the seasoned vegetable mixture out onto a baking sheet in a single layer for even roasting.

                - Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the veggies are tender with slightly charred edges. Remember to toss the veggies halfway through cooking to ensure they roast evenly.

                  Prepare the Chipotle Crema:

                    - While the veggies are in the oven, take a small bowl and mix together the Greek yogurt (or sour cream), adobo sauce, lime juice, and a pinch of salt.

                      - Stir until fully combined, making adjustments to the heat level according to your preference by varying the amount of adobo sauce.

                        Warm the Tortillas:

                          - In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side. You want them to become pliable and slightly toasted, enhancing their flavor and texture.

                            Assemble the Tacos:

                              - Once the roasted vegetables are ready, take them out of the oven.

                                - On each tortilla, place a generous scoop of the roasted vegetable mixture.

                                  - Drizzle with the chipotle crema, and add fresh cilantro on top. If desired, include slices of avocado and finish with crumbled cheese for an extra burst of flavor.

                                    Serve and Enjoy:

                                      - Serve the tacos warm, with lime wedges on the side for an optional squeeze of citrus.

                                        - Treat yourself to the vibrant flavors of this delicious meal with every bite!
