2 bell peppers (one red, one yellow), diced

1 medium zucchini, diced

1 small red onion, chopped

1 cup corn (fresh or frozen)

2 tablespoons olive oil

1 teaspoon smoked paprika

8 small corn or flour tortillas

1 cup crumbled goat cheese

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for roasting the vegetables.

    Prepare the Vegetables: In a large mixing bowl, combine the diced bell peppers, zucchini, chopped red onion, and corn.
