Roasted Tomato and White Bean Toast

2 cups cherry tomatoes, halved

1 can (15 oz) white beans (cannellini or Great Northern), drained and rinsed

3 tablespoons olive oil, divided

1 teaspoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

4 slices of hearty whole-grain bread

1/4 cup fresh basil leaves, chopped, plus extra for garnish

Optional: Crushed red pepper flakes, for a spicy kick

Optional: Fresh lemon juice, for drizzling

Preheat the oven: Set your oven temperature to 400°F (200°C) to prepare for roasting.

    Prepare the tomatoes: In a large bowl, combine the halved cherry tomatoes with 2 tablespoons of olive oil, minced garlic, dried oregano, and a sprinkle of salt and pepper. Toss until the tomatoes are evenly coated. Spread the mixture out in a single layer on a baking sheet.

      Roast the tomatoes: Place the baking sheet in the preheated oven and roast the tomatoes for about 20-25 minutes. They should become blistered and slightly caramelized, so remember to give them a gentle stir halfway through the roasting time for even cooking.

        Make the white bean mixture: While the tomatoes are roasting, take a mixing bowl and add the drained white beans, balsamic vinegar, the remaining 1 tablespoon of olive oil, a pinch of salt, and pepper. Fold in half of the chopped basil. Use a fork to gently mash the beans, ensuring to leave some whole for added texture.
