3 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (omit if preferred for milder flavor)

1/3 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon salt, or to taste

1/2 teaspoon black pepper

Olive oil for roasting

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures that the corn will roast evenly and develop a delicious char.

    Roast the Corn: Arrange the husked ears of corn on a baking sheet. Drizzle the corn generously with olive oil and sprinkle a pinch of salt over each ear to enhance the flavor. Place the baking sheet in the preheated oven and roast for approximately 25-30 minutes. Be sure to turn the corn occasionally to promote even charring, until the kernels are beautifully charred and caramelized. Once roasted, remove from the oven and allow the corn to cool slightly.

      Cut the Corn Kernels: Once the corn is cool enough to handle, take a sharp knife and carefully slice the kernels off the cob, charred side down, into a large mixing bowl to capture all the delicious juices.

        Combine the Ingredients: To the bowl with the roasted corn, add the diced avocados, finely chopped red onion, diced red bell pepper, minced jalapeño (if using for a kick), and fresh cilantro.

          Dress the Salsa: Squeeze the freshly squeezed lime juice over the mixed ingredients. Season with salt and black pepper. Gently fold everything together using a large spoon or spatula, ensuring to mix well without mashing the avocados too much, preserving their creamy texture.
