Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the cheesecake filling:

16 oz cream cheese, softened to room temperature

1 cup powdered sugar

1 cup Nutella

2 large eggs, at room temperature

1 teaspoon vanilla extract

¼ cup heavy cream

For the ganache topping:

½ cup heavy cream

1 cup semi-sweet chocolate chips

2 tablespoons Nutella (for drizzling)

A pinch of sea salt (for garnish)

Instructions

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract.

        - Mix until the ingredients are well combined into a sandy texture.

          - Press the mixture firmly and evenly into the bottom of a 9x9 inch baking dish.

            - Bake in the preheated oven for 10-12 minutes, or until the crust is slightly golden and fragrant.

              - Remove from the oven and allow it to cool completely in the pan.

                Make the cheesecake filling:

                  - In a large mixing bowl, use an electric mixer on medium speed to beat the softened cream cheese until it is smooth and creamy, about 2-3 minutes.

                    - Gradually add in the powdered sugar, mixing until it is fully incorporated and smooth.

                      - Add the Nutella, eggs, vanilla extract, and heavy cream to the bowl.

                        - Continue to mix until all ingredients are well combined and the mixture is silky smooth.

                          Combine and bake:

                            - Pour the cheesecake filling over the cooled crust and use a spatula to spread it evenly across the surface.

                              - Bake in the oven for 25-30 minutes. The edges should be set with a slight jiggle in the center, indicating it is not overbaked.

                                - Once done, remove it from the oven and allow it to cool at room temperature for about 30 minutes.

                                  Prepare the ganache:

                                    - In a small saucepan, heat ½ cup of heavy cream over medium heat until it starts to simmer gently (do not let it boil).

                                      - Remove the saucepan from the heat and stir in the chocolate chips.

                                        - Mix until the chocolate has melted and the ganache is smooth.

                                          - Set it aside to cool slightly, allowing it to thicken.

                                            Top the cheesecake:

                                              - Once the cheesecake has cooled, pour the chocolate ganache over the top, spreading it with a spatula for even coverage.

                                                - In a separate small bowl, combine the 2 tablespoons of Nutella with a teaspoon of cream to thin it out.

                                                  - Drizzle this Nutella mixture over the ganache in a swirling pattern for an artistic touch.

                                                    - Finish with a pinch of sea salt sprinkled on top to enhance the flavors.

                                                      Chill and cut:

                                                        - Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until the bars are fully set and firm.

                                                          - Once set, lift the cheesecake out of the dish using the edges of parchment paper.

                                                            - Cut into squares or bars for serving, using a sharp knife warmed under hot water for clean edges.

                                                              Serve and enjoy:
