Ingredients

2 cups cooked jasmine rice (ideally refrigerated overnight)

1 tablespoon vegetable oil

1 tablespoon sesame oil

1 cup mixed vegetables (a colorful blend of carrots, peas, bell peppers, and corn)

1 small onion, finely chopped

2 cloves garlic, minced

2 large eggs, lightly beaten

3 green onions, chopped (keep white and green parts separate)

3 tablespoons soy sauce (adjust according to your taste)

1 tablespoon oyster sauce (or a vegetarian alternative)

1 teaspoon fresh ginger, minced

Salt and black pepper to taste

Optional: Red pepper flakes for heat

Optional: Fresh cilantro for garnish

Instructions

Prepare the Rice: If you haven’t cooked the jasmine rice yet, do so and allow it to cool completely—preferably overnight in the refrigerator. This step ensures that the rice is dry and less likely to clump together during frying.

Heat the Oils: Place a large wok or non-stick skillet over medium-high heat. Add the vegetable oil and allow it to heat until shimmering. Once hot, add the sesame oil to boost the flavor profile.

Sauté Aromatics: Add the finely chopped onion and minced garlic to the pan. Sauté for about 2-3 minutes, stirring occasionally, until the onions are translucent and aromatic but not browned.

Scramble the Eggs: Push the sautéed onion and garlic to one side of the pan to create space. Pour the lightly beaten eggs into the vacant side of the pan. Scramble them gently until they are fully cooked, then mix them with the onion and garlic blend.

Add the Vegetables: Stir in the mixed vegetables along with the minced fresh ginger. Cook for an additional 3-4 minutes, stirring frequently, allowing the vegetables to soften slightly while maintaining their vibrant color.

Incorporate the Rice: Add the cold, cooked jasmine rice to the pan. Use a spatula to break any clumps apart and thoroughly mix the rice with the vegetable mixture.

Flavor It Up: Drizzle the soy sauce and oyster sauce over the rice mixture, followed by the chopped green onion whites. Stir well to combine, cooking for an additional 2-3 minutes. This allows the rice to absorb all the flavorful sauces.

Season the Dish: Taste the mixture and season with salt, black pepper, and, if desired, a pinch of red pepper flakes for a bit of heat. Stir everything well to ensure even seasoning.

Final Touch: When the mixture is heated through and combined, remove it from the heat. Garnish with the reserved green onion tops and sprinkle fresh cilantro if you like.

Serve and Enjoy: Serve the sizzling veggie-packed fried rice hot, either as a delectable main or as a side dish alongside your favorite protein—a delightful way to enjoy a nutritious meal!
