Ingredients
  

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 cup jasmine rice (or substitute with brown rice)

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons cornstarch

1 tablespoon water (for cornstarch slurry)

2 tablespoons water (for steaming broccoli)

Optional toppings: sesame seeds, sliced green onions, and/or red pepper flakes

Instructions
 

Cook the Rice:

    - Begin by rinsing the jasmine rice under cold running water until the water is clear.

      - In a medium saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt.

        - Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes, or follow the package instructions.

          - After the cooking time, remove the saucepan from heat and let it sit covered for an additional 5 minutes to allow the rice to steam.

            Prepare the Teriyaki Sauce:

              - In a small mixing bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger until well combined. Set the sauce mixture aside.

                Cook the Chicken:

                  - Heat a large skillet or wok over medium-high heat and drizzle in a small amount of oil.

                    - Once the oil is hot, add the bite-sized chicken pieces to the skillet.

                      - Cook the chicken, stirring frequently, until it is browned on all sides and fully cooked through (approximately 5-7 minutes).

                        Add Broccoli and Sauce:
