1 lb (450g) chicken breast, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons freshly squeezed lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

1 medium bell pepper, cut into 1-inch pieces (optional for color)

1 medium red onion, cut into wedges (optional for sweetness)

Fresh parsley, finely chopped, for garnish

Marinate the Chicken: In a mixing bowl, whisk together the olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, paprika, salt, and pepper until well combined. Add the cubed chicken breast to the bowl, ensuring the pieces are fully coated with the marinade. Cover the bowl with plastic wrap and let it marinate at room temperature for at least 15 minutes, or refrigerate for up to 2 hours for a deeper infusion of flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for about 15 minutes to prevent them from burning on the grill. In the meantime, preheat your grill or grill pan over medium heat until hot.
