Ingredients

2 cups cooked chicken breast, shredded

1 can black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced bell peppers (use a mix of colors for visual appeal)

1 teaspoon taco seasoning

8 flour tortillas (8-inch size)

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup salsa

1/2 cup sour cream (optional, for serving)

Fresh cilantro, chopped (optional, for garnish)

Instructions

Preheat the oven: Begin by preheating your oven to 375°F (190°C) to get it ready for baking.

Prepare the chicken mixture: In a large mixing bowl, combine the shredded chicken with the black beans, corn, diced bell peppers, and taco seasoning. Stir well until all ingredients are evenly mixed and coated with the spices.

Layer the tortillas: Lightly grease a 9x13 inch baking dish. Arrange 4 of the tortillas on the bottom, slightly overlapping them to ensure complete coverage.

Add chicken mixture: Evenly distribute half of the chicken mixture over the tortillas. Sprinkle half of the shredded cheddar and Monterey Jack cheeses on top for a delicious cheesy layer.

Repeat the layers: Add another layer by placing the remaining 4 tortillas over the cheese. Spread the rest of the chicken mixture evenly, then top with the remaining cheeses for a glorious cheesy finish.

Top with salsa: Carefully pour the salsa over the top layer of cheese, allowing it to spread out evenly for added flavor and moisture.

Bake the casserole: Cover the baking dish tightly with aluminum foil to prevent the cheese from browning too quickly. Bake in the preheated oven for 20 minutes. After this time, remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is melted, bubbly, and the edges are golden brown.

Cool and serve: Once done, allow the casserole to cool for about 5 minutes to set. Slice into generous portions and garnish with freshly chopped cilantro if desired. Serve warm alongside a dollop of sour cream for an extra creamy touch.
