1/2 small red onion, finely chopped

1 medium jalapeño, seeded and minced (adjust according to your spice preference)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

2 tablespoons fresh lime juice

Salt, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup shredded cheese (Mexican blend or cheddar works best)
