Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, julienned

1 cup broccoli florets, bite-sized

1 cup snap peas, trimmed

2 cloves garlic, minced

1 tablespoon fresh ginger, finely minced

2 green onions, sliced thinly

Cooked jasmine rice or quinoa, for serving (about 2 cups)

Sesame seeds, for garnish

Instructions

Marinate the Beef: In a medium mixing bowl, combine the thinly sliced beef with soy sauce, oyster sauce, and cornstarch. Toss until the beef is evenly coated. Cover the bowl and let it marinate for at least 15 minutes, or refrigerate for up to 1 hour for a more intense flavor experience.

Prep the Veggies: While the beef marinates, prepare the vegetables. Julienne the red bell pepper, cut the broccoli into bite-sized florets, and trim the ends of the snap peas. Set aside in a bowl for easy access during cooking.

Heat the Oil: Place a large skillet or wok over medium-high heat and add the vegetable oil. Allow the oil to heat until shimmering, indicating it's ready for cooking.

Cook the Beef: Carefully add the marinated beef to the hot oil, spreading it out into a single layer for efficient cooking. Sear for about 2-3 minutes, flipping halfway, until the beef is browned and cooked through. Once ready, transfer the beef to a plate and set aside.

Stir-Fry the Vegetables: In the same skillet, add the minced garlic and ginger. Sauté for 30 seconds until fragrant, being cautious not to burn them. Next, add the julienned bell pepper, broccoli florets, and snap peas. Stir-fry for approximately 3-4 minutes, ensuring the vegetables remain tender yet crisp.

Combine and Finish: Return the cooked beef to the skillet with the vegetables. Toss everything together gently for an additional minute to blend the flavors. Towards the end of cooking, add the sliced green onions and give everything a final toss.

Serve: Spoon the savory beef and vegetable stir-fry over a generous bed of cooked jasmine rice or quinoa. For a beautiful presentation, sprinkle with sesame seeds just before serving to add delightful texture and flavor.
