Quick Beef and Vegetable Stir-Fry

1 pound (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced into thin strips

1 cup broccoli florets, cut into bite-sized pieces

1 cup snap peas, ends trimmed

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

2 green onions, chopped finely

Cooked jasmine or basmati rice, for serving

Sesame seeds, for garnish (optional)

Instructions
 

Marinate the Beef: In a medium bowl, combine the freshly sliced beef with soy sauce, oyster sauce, and cornstarch. Use your hands or a spoon to mix thoroughly, ensuring every piece is well-coated. Allow it to marinate for about 10 minutes while you prepare the vegetables.

    Prepare the Vegetables: Rinse the red bell pepper under cold water, slice it into thin strips, and set aside. Trim the ends of the snap peas and rinse them as well. Florets from the broccoli should be washed and cut into smaller, bite-sized pieces for even cooking.

      Heat the Wok: Place a large wok or a deep skillet over high heat. Once heated, add 1 tablespoon of vegetable oil, swirling it around to coat the surface. It should shimmer when the oil is hot enough.

        Cook the Beef: Carefully add the marinated beef to the hot wok in a single layer. Let it sear undisturbed for about 2 minutes to develop a good browning. After that, stir-fry the beef for an additional minute until cooked through. Remove the beef from the wok and set aside on a plate.

          Stir-Fry the Vegetables: In the same wok, pour in the remaining tablespoon of oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant and golden. Toss in the sliced red bell pepper, broccoli florets, and snap peas. Stir-fry for 3-4 minutes, or until the vegetables are vibrant and tender-crisp.

            Combine & Finish: Return the cooked beef to the wok with the vegetables. Carefully toss everything together to combine and cook for an additional 2 minutes, allowing the flavors to meld. If using, sprinkle the chopped green onions over the top for added freshness and flavor.

              Serve: Serve the sizzling stir-fry over a generous helping of hot, cooked jasmine or basmati rice. For an extra touch, garnish with sesame seeds to enhance the presentation.
