Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1 cup canned pure pumpkin (ensure it’s not pumpkin pie filling)

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 cup semisweet chocolate chips

Optional: 1/4 cup chopped nuts (such as walnuts or pecans)

Instructions

Preheat Your Oven:

    - Begin by preheating your oven to 350°F (175°C). Prepare a 12-cup muffin tin by lining it with paper liners or lightly greasing it with cooking spray.

      Mix the Dry Ingredients:

        - In a large mixing bowl, use a whisk to combine the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, ground cloves, and salt. Whisk until all dry ingredients are evenly blended.

          Combine the Wet Ingredients:

            - In a separate bowl, add the canned pure pumpkin, packed brown sugar, granulated sugar, vegetable oil (or melted coconut oil), eggs, and vanilla extract. Whisk these ingredients together until the mixture is smooth and all components are well incorporated.

              Combine Wet and Dry Mixtures:

                - Gently pour the wet mixture into the bowl with the dry ingredients. Using a spatula or a wooden spoon, carefully fold the two mixtures together until they are just combined. Avoid overmixing to keep the muffins tender.

                  Incorporate Chocolate Chips:

                    - Gently fold in the semisweet chocolate chips and, if you are using them, the chopped nuts. Ensure they are evenly distributed throughout the batter.

                      Fill the Muffin Tin:

                        - Using a spoon or an ice cream scoop, divide the batter evenly among the muffin cups, filling each cup about 2/3 full to allow for rising during baking.

                          Bake the Muffins:

                            - Place the muffin tin in the preheated oven and bake for 18-20 minutes. Check for doneness by inserting a toothpick into the center of a muffin; it should come out clean when they are done.

                              Cool the Muffins:

                                - Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for approximately 5 minutes. Then, carefully transfer the muffins to a wire rack to cool completely.

                                  Serve and Enjoy:

                                    - Relish your delightful Pumpkin Spice Chocolate Chip Muffins either warm or at room temperature. They make a comforting companion to a warm cup of coffee or tea, ideal for any time of day!
