Ingredients

1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup unsweetened pumpkin puree

1/2 cup brewed coffee, cooled to room temperature

1/4 cup pure maple syrup

1/4 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

Optional: 1/2 cup chopped nuts (such as walnuts or pecans), chocolate chips, or dried cranberries

Instructions

Preheat the Oven: Begin by preheATING your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Whisk thoroughly until all dry ingredients are well blended and there are no lumps.

Combine Wet Ingredients: In a separate bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, cooled coffee, maple syrup, vegetable oil, egg, and vanilla extract. Mix until the mixture is smooth and cohesive.

Combine Mixtures: Gradually pour the wet ingredients into the dry mixture. Using a spatula, gently fold the two mixtures together. Be careful not to overmix; it’s perfectly fine to have a few small lumps remaining. If you’re adding extras, now is the time to fold in the chopped nuts, chocolate chips, or dried cranberries.

Scoop the Batter: Using a spoon or an ice cream scoop, fill each muffin cup about two-thirds full with the batter. This helps ensure they have room to rise while baking without overflowing.

Bake: Place the filled muffin tin into your preheated oven and bake for 18-20 minutes. Check for doneness by inserting a toothpick into the center of a muffin; if it comes out clean, they are ready to be removed.

Cool: Once baked, allow the muffins to cool in the tin for about 5 minutes. After that, carefully transfer them to a wire rack to cool completely.

Serve: For an extra touch of sweetness, consider drizzling additional maple syrup over the top of each muffin. Enjoy these delightful pumpkin maple latte muffins warm or at room temperature, perfect for any occasion!
