Ingredients

8 large egg whites

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese

1/4 cup shredded low-fat cheese (e.g., mozzarella or cheddar)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

Non-stick cooking spray or olive oil, for greasing

Instructions

Preheat the Oven:

Begin by preheating your oven to 350°F (175°C). Generously spray a muffin tin with non-stick cooking spray or lightly grease it with olive oil to ensure easy removal of the egg bites once baked.

      Prepare the Vegetables:

In a medium mixing bowl, combine the chopped spinach, halved cherry tomatoes, and crumbled feta cheese. Toss them gently to ensure even distribution, then set this mixture aside for later.

          Whisk the Egg Whites:

In a separate large bowl, whisk the egg whites vigorously until they become slightly frothy and increase in volume. Sprinkle in the garlic powder, onion powder, and season with salt and pepper. Mix thoroughly to incorporate the seasonings into the egg whites.

              Combine Ingredients:

Carefully fold the vegetable and cheese mixture into the whisked egg whites, making sure not to deflate them. Use a spatula to gently combine until everything is evenly distributed.

                  Pour into Muffin Tin:

Using a ladle or measuring cup, pour the egg white mixture into each cavity of the prepared muffin tin, filling them about three-quarters full. This will allow room for them to rise while baking.

                      Add Shredded Cheese:

For an added layer of flavor and texture, sprinkle the shredded low-fat cheese generously over the top of each filled muffin cup.

                          Bake:

Place the muffin tin in the preheated oven and bake for 18-20 minutes. Keep an eye on them; they should be set in the center and have a light golden color on top.

                              Cool and Remove:

Once baked to perfection, carefully remove the muffin tin from the oven. Allow the egg bites to cool in the tin for about 5 minutes before gently running a knife around the edges and lifting them out.

                                  Enjoy:

Serve the egg white bites warm for a satisfying snack or breakfast option. Alternatively, store any leftovers in an airtight container in the refrigerator for a quick grab-and-go meal!
