Ingredients

1 lb (450g) boneless, skinless chicken breast, diced into bite-sized pieces

1 cup fresh pineapple, diced (canned pineapple can be substituted if needed)

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, finely diced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon olive oil

1 teaspoon ground ginger

1/2 teaspoon black pepper

1 teaspoon salt

1 tablespoon lime juice

4 large pita breads or pita pockets

Fresh cilantro, for garnish (optional)

Instructions

Marinate the Chicken: In a medium-sized mixing bowl, combine the diced chicken with soy sauce, honey, olive oil, ground ginger, black pepper, and salt. Stir well to ensure all pieces are coated. Let the mixture marinate for at least 30 minutes at room temperature. For enhanced flavor, consider marinating it overnight in the refrigerator.

Sauté the Vegetables: Place a large skillet over medium heat and add a drizzle of olive oil. Once hot, add the diced red onion, sautéing for about 3-4 minutes until it becomes translucent. Add the minced garlic along with the diced red and green bell peppers, continuing to cook for another 3-4 minutes until the peppers are tender and vibrant.

Cook the Chicken: Push the sautéed vegetables to one side of the skillet and add the marinated chicken to the empty space. Cook the chicken for about 7-8 minutes, stirring occasionally, until it is thoroughly cooked and no longer pink. Once fully cooked, mix in the fresh pineapple and lime juice, allowing everything to simmer together for an additional 2-3 minutes so the pineapple is heated through.

Prepare the Pita Pockets: While the chicken and vegetable mixture is cooking, warm the pita bread or pockets in a dry skillet over low heat or microwave for about 15-20 seconds. This will make them soft and easier to fill.

Assemble the Pockets: Carefully open each pita pocket. Using a spoon, generously fill each pocket with the pineapple pepper chicken mixture, being sure to distribute the ingredients evenly.

Garnish and Serve: If desired, top with fresh cilantro for a burst of flavor and a pop of color. Serve these Tropical Bliss Pineapple Pepper Chicken Pockets warm, and enjoy the delightful combination of flavors!
