For the Chicken:

1 lb ground chicken

1/3 cup fresh basil pesto

1/2 cup grated Parmesan cheese

1 clove garlic, finely minced

Salt and freshly ground black pepper, to taste

For the Sliders:

12 mini slider buns (brioche or sesame)

1 cup fresh mozzarella cheese, sliced into rounds

1 cup baby spinach or arugula

1/4 cup sun-dried tomatoes, chopped (optional)

Extra virgin olive oil, for drizzling

For the Pesto Drizzle:

1/4 cup fresh basil pesto

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

Prepare the Chicken Mixture:

    - In a large mixing bowl, thoroughly combine the ground chicken, fresh basil pesto, grated Parmesan cheese, minced garlic, and a generous pinch of salt and pepper. Mix until the ingredients are well incorporated and form a cohesive mixture.

      Cook the Chicken Patties:

        - Preheat your grill or a non-stick stovetop skillet over medium heat. While it heats up, divide the chicken mixture into 12 equal portions. Shape each portion into a patty, ensuring they are evenly sized for uniform cooking.

          - Once the skillet or grill is hot, place the patties in and cook for about 5-6 minutes on each side, or until they are golden brown and reach an internal temperature of 165°F (75°C).

            Prepare the Sliders:

              - Lightly drizzle olive oil over the slider buns and toast them on the grill or in a toaster until they’re golden brown and slightly crispy – this enhances both flavor and texture.

                Assemble the Sliders:

                  - Begin by placing a cooked chicken patty on the bottom half of each toasted slider bun. Layer on a slice of fresh mozzarella cheese followed by a handful of baby spinach or arugula, and sprinkle on the chopped sun-dried tomatoes if desired. Cap it off with the top half of the bun.
