2 ripe peaches, pitted and finely chopped

1/2 cup peach preserves

1/4 cup soy sauce

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

Fresh basil or cilantro, for garnish

Prepare the Marinade: In a medium mixing bowl, combine the peach preserves, soy sauce, Dijon mustard, apple cider vinegar, olive oil, minced garlic, grated ginger, salt, and pepper. Whisk the mixture thoroughly until all ingredients are well blended to form a smooth marinade.

    Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the prepared marinade over the chicken, ensuring it is evenly coated on all sides. Seal the bag tightly or cover the dish, then refrigerate for at least 1 hour, or, for an even richer flavor, allow to marinate overnight.

      Preheat the Grill or Oven: If you’re grilling, preheat your grill to medium-high heat. If you prefer baking, set your oven to preheat at 400°F (200°C).

        Cook the Chicken:
