14 oz firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cups broccoli florets

1 cup snap peas

4 green onions, chopped

3 cloves garlic, minced

1-inch piece ginger, grated

1/2 cup freshly squeezed orange juice

Zest of 1 orange

3 tablespoons soy sauce

2 tablespoons maple syrup or honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

Sesame seeds, for garnish

Fresh cilantro, for garnish

Prepare the Tofu: Begin by pressing the tofu to eliminate excess moisture, which helps it to crisp up better. Cut the tofu into bite-sized cubes and thoroughly coat each cube with cornstarch, ensuring an even covering for a crispy texture.

    Make the Orange Glaze: In a medium-sized mixing bowl, combine the freshly squeezed orange juice, orange zest, soy sauce, maple syrup (or honey), rice vinegar, and sesame oil. Use a whisk to blend the ingredients thoroughly before setting aside for later use.

      Cook the Tofu: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the coated tofu cubes in a single layer, allowing them to cook undisturbed for about 5-7 minutes, flipping occasionally until they become golden brown and crispy on all sides. Remove the crispy tofu from the skillet and set aside on a plate.
