12 oz (340 g) pasta (penne or fusilli recommended)

2 cups vegetable broth

1 cup heavy cream

1 cup pesto sauce (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Sauté the Garlic: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until it becomes fragrant—this releases its aromatic flavor into the oil.
