Ingredients
  

1 cup long-grain white rice

1 can (15 oz) black beans, drained and rinsed

1 lb ground beef or turkey

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (red or green for color)

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

2 cups vegetable or chicken broth

2 tbsp taco seasoning (store-bought or homemade)

1 tsp ground cumin

1 tsp smoked paprika

Salt and black pepper, to taste

Olive oil, for sautéing

Fresh cilantro, chopped, for garnish

Optional toppings: shredded cheese, diced avocado, sour cream, lime wedges

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion and diced bell pepper, cooking for about 3-4 minutes until softened. Then, stir in the minced garlic and sauté for an additional minute, until fragrant and golden.

    Brown the Meat: Push the sautéed vegetables to the side of the pot. Add the ground beef or turkey to the empty space. Cook the meat, breaking it apart with a spoon, for about 5-7 minutes until it is browned and cooked through. If there is any excess fat, drain it carefully.

      Incorporate Rice and Spices: Add the uncooked rice to the pot along with the taco seasoning, ground cumin, smoked paprika, and a pinch of salt and black pepper. Stir everything together to coat the rice in the spices, cooking for 1-2 minutes to enhance the flavors.

        Add the Liquids and Mix: Pour in the vegetable or chicken broth, along with the diced tomatoes (including their juice), black beans, and corn. Stir everything together thoroughly, ensuring the rice is fully submerged in the liquid for even cooking.

          Simmer the Dish: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low. Cover the pot with a lid and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Check occasionally and stir gently as needed to prevent sticking.
