Ingredients

12 oz spaghetti or linguine

4 cups vegetable broth

1 cup cherry tomatoes, halved

1 small onion, finely chopped

4 cloves garlic, minced

1 tsp red pepper flakes (adjust to taste)

1/2 cup fresh basil leaves, chopped

Zest of 1 lemon

Juice of 2 lemons

1/2 cup grated Parmesan cheese (optional for serving)

Salt and pepper to taste

2 tbsp olive oil

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, warm the olive oil over medium heat. Once hot, add the finely chopped onion. Sauté for about 2-3 minutes until the onion turns translucent. Then, stir in the minced garlic and red pepper flakes. Cook for an additional 1-2 minutes until the garlic releases its aroma and begins to soften.

Add Pasta and Liquid: Carefully stir in your choice of spaghetti or linguine. Next, pour in the vegetable broth, ensuring the pasta is mostly submerged. Bring the mixture to a gentle boil. Once boiling, reduce the heat and let it simmer.

Infuse with Flavor: Introduce the halved cherry tomatoes, lemon zest, and fresh lemon juice into the pot. Sprinkle in salt and pepper according to your taste preference. Stir gently to combine all ingredients.

Cook the Pasta: Allow the pasta to cook uncovered for about 10-12 minutes. Stir occasionally to keep the pasta from sticking together. The goal is for most of the liquid to be absorbed by the pasta while cooking it to a perfect al dente texture.

Add Fresh Basil: Once the pasta is tender, immediately remove the pot from heat. Fold in the chopped fresh basil leaves, letting their aromatic flavor permeate through the dish.

Serve: If you like, generously sprinkle grated Parmesan cheese over each serving for added creaminess. Adjust seasoning with extra salt, pepper, or lemon juice as needed. Serve hot and relish the vibrant flavors of this delightful pasta dish!

                - Presentation Tips: For an eye-catching presentation, serve the pasta in shallow bowls. Garnish with additional basil leaves and a slice of lemon on the side for a fresh touch.
