One-Pot Balsamic Vinaigrette Mac and Cheese

2 cups elbow macaroni

1 tablespoon olive oil

1 small onion, finely diced

2 garlic cloves, minced

4 cups vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup balsamic vinegar

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the finely diced onion and sauté for approximately 3-4 minutes, or until it becomes translucent. Next, stir in the minced garlic and continue to cook for an additional 1 minute until the garlic is fragrant.

    Add Pasta: Pour the uncooked elbow macaroni into the pot, mixing well with the sautéed onion and garlic to ensure the pasta is coated in the oil and flavors.

      Combine Liquids: Add the vegetable broth, heavy cream, and balsamic vinegar to the pot. Stir in the Italian seasoning, seasoning with salt and freshly ground black pepper to your taste.

        Cook Pasta: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to medium-low, cover the pot, and allow it to simmer for about 8-10 minutes. Stir occasionally to prevent sticking, until the pasta is al dente and absorbs most of the liquid.
