1 lb (450g) baby potatoes, halved

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 medium onion, thinly sliced

4 cloves of garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (optional, for an extra kick)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for roasting.

    Prepare the Vegetables: In a spacious mixing bowl, combine halved baby potatoes, sliced red, yellow, and green bell peppers, and the sliced onion. Drizzle with olive oil and sprinkle with oregano, thyme, red pepper flakes, salt, and black pepper.       Add the Sausage: Cut the Italian sausage links into 1-inch pieces. Add these pieces directly into the bowl with the seasoned vegetables.
