1 cup corn (fresh, frozen, or canned)

1 cup beef or vegetable broth

1 tablespoon taco seasoning

1 teaspoon ground cumin

1 teaspoon chili powder (optional for added heat)

Salt and pepper to taste

1 cup shredded cheese (cheddar or a Mexican blend)
