Ingredients

1 lb ground beef (or ground turkey)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (choose either red or green)

1 can (10 oz) enchilada sauce

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup cooked rice (use either white or brown)

1 tsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper to taste

1 1/2 cups shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions

Brown the Beef: Heat a large skillet over medium-high heat. Add the ground beef (or turkey) and cook, breaking it apart with a spatula until it is browned and cooked through, about 5-7 minutes. Drain any excess fat from the skillet if needed.

Add Aromatics: To the browned meat, add the diced onion and bell pepper. Sauté together for 3-4 minutes until the onion becomes translucent. Then, stir in the minced garlic and cook for an additional 30 seconds, just until the garlic is fragrant.

Combine Ingredients: Lower the heat to medium. Add the black beans, corn, cooked rice, enchilada sauce, chili powder, cumin, smoked paprika, salt, and pepper to the skillet. Stir thoroughly to ensure all ingredients are well combined.

Simmer: Allow the mixture to simmer for about 5-7 minutes, stirring occasionally. This will help the flavors meld together and ensure everything is heated through.

Add Cheese: Sprinkle the shredded cheddar cheese evenly over the beef mixture in the skillet. Cover the skillet with a lid and let it sit for 2-3 minutes, or until the cheese melts and becomes bubbly.

Serve: Once the cheese is fully melted, remove the skillet from heat. Garnish with fresh chopped cilantro. Serve hot with a dollop of sour cream on top, if desired.
