1 lb ground beef

1 cup long-grain white rice

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

2 cups beef broth

1 cup shredded cheddar cheese

1 cup frozen corn

1 tsp paprika

1 tsp cumin

1 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to prepare it for baking.

    Cook the Beef: In a large, oven-safe skillet or pan, warm the olive oil over medium heat. Once the oil is shimmering, add the diced onion and minced garlic. Sauté for about 3-4 minutes, or until the onion turns translucent. Add the ground beef, using a spoon or spatula to break it into smaller pieces. Cook until the beef is browned and fully cooked through, roughly 5-7 minutes. After cooking, drain any excess fat from the pan.

      Add Ingredients: To the skillet, stir in the uncooked rice, diced tomatoes (with their juices), the drained and rinsed kidney beans, frozen corn, beef broth, paprika, cumin, oregano, and season with salt and pepper. Mix all the ingredients thoroughly to ensure an even distribution.

        Simmer: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low and cover the pan with a lid. Let it simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed. Remember to stir occasionally to prevent the rice from sticking to the bottom of the pan.

          Cheesy Topping: After simmering, carefully remove the skillet from the heat. Sprinkle the shredded cheddar cheese evenly over the entire surface of the casserole for that delicious cheesy finish.

            Bake: Place the skillet in the preheated oven. Bake uncovered for approximately 10-15 minutes, or until the cheese is melted, bubbly, and lightly golden.
