1 cup uncooked long-grain white rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes, drained

2 cups shredded cheddar cheese

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, finely chopped (for garnish)

Sauté the Base: In a large skillet or frying pan, heat the olive oil over medium heat. Once hot, add the diced onion and bell pepper. Sauté the vegetables for about 3-4 minutes, or until they have softened. Stir in the minced garlic and cook for an additional minute, until the garlic is fragrant.

    Brown the Beef: Turn the heat up to medium-high and add the ground beef to the skillet. Cook the beef, breaking it apart with a wooden spoon, for approximately 5-7 minutes, or until it is browned and no longer pink. If there is excess grease, carefully drain it from the pan.

      Add Rice and Spices: Once the beef is browned, stir in the uncooked rice along with the dried oregano, smoked paprika, salt, and black pepper. Mix everything thoroughly to ensure the rice is well-coated with the spices.
