One-Pan Cheesy Beef and Rice Casserole

1 pound ground beef

1 cup uncooked long-grain white rice

1 can (14.5 oz) diced tomatoes, undrained

1 medium onion, finely chopped

2 cloves garlic, minced

2 cups beef broth

1 cup frozen mixed vegetables (such as peas, carrots, and corn)

1 teaspoon smoked paprika for depth of flavor

1 teaspoon Italian seasoning

Salt and black pepper to taste

2 cups shredded sharp cheddar cheese for extra flavor

2 tablespoons olive oil for sautéing

Fresh parsley for garnish (optional)

Instructions
 

Begin by preheating your oven to 350°F (175°C) to prepare for baking.

    In a large, oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion is translucent and the garlic is fragrant.

      Introduce the ground beef to the skillet. Cook for 5-7 minutes, breaking it apart with a spatula, until it's browned throughout. If there is excess fat, drain it to keep the dish from becoming greasy.

        Once the beef is browned, stir in the uncooked rice, undrained diced tomatoes, beef broth, frozen mixed vegetables, smoked paprika, Italian seasoning, and season with salt and black pepper to your taste. Bring the mixture to a gentle simmer, then cover the skillet with a lid, reducing heat to low. Allow it to simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed.

          After the rice is cooked, remove the skillet from heat. Evenly sprinkle the shredded sharp cheddar cheese over the beef and rice mixture, allowing the cheese to create a delicious topping.

            Place the skillet in the preheated oven and bake uncovered for 10-15 minutes, or until the cheese has melted and is bubbly, creating a delightful golden brown top.
