1 lb (450g) large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups chicken broth

1 tablespoon Cajun seasoning

1 medium onion, diced

1 bell pepper (red or green), diced

3 cloves garlic, minced

1 cup canned diced tomatoes (including juices)

1 cup corn (frozen or fresh)

2 tablespoons olive oil

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Juice of half a lemon

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper and sauté for about 3-4 minutes, or until the vegetables are soft and translucent.

    Add Garlic and Tomato: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Next, add the diced tomatoes along with their juices to the skillet, mixing well to combine all the ingredients.

      Season the Shrimp: Sprinkle the Cajun seasoning over the mixture, then add the shrimp. Toss the shrimp gently to ensure they are evenly coated with the spices. Cook for about 2-3 minutes, just until the shrimp start to turn pink – they should not be fully cooked at this stage.

        Add Rice and Broth: Stir in the long-grain rice, corn, and chicken broth. Ensure everything is well mixed, then bring the mixture to a boil.
