1 pound Brussels sprouts, trimmed and halved

6 slices thick-cut bacon, chopped into bite-sized pieces

1 medium red onion, thinly sliced

3 cloves garlic, minced

2 tablespoons extra-virgin olive oil

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (optional, for a spicy kick)

½ cup freshly grated Parmesan cheese

2 tablespoons balsamic vinegar

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to 400°F (200°C) to ensure it's hot and ready for baking.

    Cook the Bacon: In a large oven-safe skillet or baking dish, add the chopped bacon. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the bacon is crispy and browned. Once cooked, use a slotted spoon to transfer the bacon to a plate lined with paper towels to absorb the excess grease. Leave approximately 1 tablespoon of the bacon fat in the skillet for flavor.

      Sauté the Aromatics: In the same skillet with the bacon fat, add the sliced red onion. Cook for 3-4 minutes until the onion is slightly softened and translucent. Then, stir in the minced garlic and cook for another minute, or until fragrant.

        Mix in the Brussels Sprouts: Add the halved Brussels sprouts to the skillet. Pour in the olive oil and sprinkle with salt, black pepper, smoked paprika, and red pepper flakes (if using). Toss everything together thoroughly to coat the Brussels sprouts in the seasoned oil and bacon goodness.

          Bake the Mixture: Evenly spread the Brussels sprouts mixture in the skillet. Place the skillet in the preheated oven and bake for 20 minutes.
