Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (or almond butter for a different flavor)

1/3 cup honey (or maple syrup for a vegan-friendly option)

1/2 cup unsweetened shredded coconut

1/4 cup mini chocolate chips (dark or semi-sweet)

1/4 cup flaxseed meal (or ground chia seeds for added nutrition)

1 tsp vanilla extract

1/4 tsp sea salt

Optional: 1/4 cup chopped nuts (such as almonds or walnuts for crunch)

Optional: 1/4 cup dried fruit (such as cranberries or raisins for natural sweetness)

Instructions

Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, shredded coconut, flaxseed meal, and sea salt. If you're using them, also add the chopped nuts and dried fruit. Mix these ingredients together thoroughly to ensure an even distribution.

Mix Wet Ingredients: In a separate bowl, combine the peanut butter (or almond butter), honey (or maple syrup), and vanilla extract. Use a whisk or spoon to mix until the mixture is smooth. If your peanut butter is on the thicker side, microwave it for about 15-20 seconds to soften it for easier mixing.

Combine Everything: Pour the smooth wet mixture into the bowl with the dry ingredients. Use a spatula or a sturdy spoon to vigorously mix everything until well combined. The mixture should be sticky enough to hold together; if it feels too crumbly, add a tablespoon more of peanut butter or honey to help bind it.

Incorporate Chocolate Chips: Carefully fold in the mini chocolate chips, ensuring they are evenly distributed throughout the mixture.

Shape the Bites: With clean hands, take small portions of the mixture and roll them into balls about 1 inch in diameter. Lay each ball on a baking sheet or plate lined with parchment paper to prevent sticking.

Chill: Once all the energy bites are formed, place the baking sheet in the refrigerator. Allow the bites to chill for at least 30 minutes to help them firm up.

Store or Serve: After chilling, enjoy your energy bites right away or transfer them to an airtight container for storage. These bites can be kept in the refrigerator for up to 1 week or in the freezer for as long as 3 months.

Prep Time: 15 min | Total Time: 45 min | Servings: About 15-20 bites

Presentation Tips: For a delightful touch, arrange the energy bites on a colorful platter and garnish with a sprinkling of shredded coconut or a few whole nuts. Enjoy as a snack or pre-workout energy boost!
