1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

1 cup cream cheese, softened to room temperature

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 ½ cups fresh strawberries, hulled and thinly sliced

2 tablespoons lemon juice

Extra strawberries and fresh mint leaves for garnish

Prepare the Crust:

          Make the Cheesecake Filling:

            In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it is smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully integrated and fluffy.

              Whip the Cream:

                In a separate bowl, pour in the heavy whipping cream and whip on medium-high speed using an electric mixer. Continue whipping for about 3-5 minutes until you achieve stiff peaks – this means when you lift the beaters, the cream holds its shape.

                  Combine Mixtures:
