1 ½ cups graham cracker crumbs

1 cup unsweetened shredded coconut

½ cup melted coconut oil (or unsalted butter)

¼ cup honey or maple syrup

¼ cup freshly squeezed lemon juice

Zest of 1 lemon

1 can (14 oz) sweetened condensed milk (choose dairy or coconut-based according to preference)

¼ teaspoon sea salt

Optional: Additional shredded coconut for topping

Prepare the Base: In a medium mixing bowl, combine 1 ½ cups of graham cracker crumbs, 1 cup of shredded coconut, ½ cup of melted coconut oil (or melted unsalted butter), ¼ cup of honey (or maple syrup), and a pinch of sea salt. Stir thoroughly until the mixture is well combined and can easily cling together when pressed.

    Press Into the Pan: Line an 8x8-inch square baking dish with parchment paper, allowing some paper to hang over the edges for easier removal later. Firmly and evenly press the crumb mixture into the bottom of the dish using your hands or a flat-bottomed glass or measuring cup to compact it well.

      Make the Lemon Filling: In a large mixing bowl, whisk together 1 can of sweetened condensed milk, ¼ cup of fresh lemon juice, the zest of 1 lemon, and ¼ teaspoon of sea salt. Continue whisking until the mixture is smooth and creamy.

        Combine Layers: Carefully pour the lemon filling over the prepared crust, using a spatula to spread it evenly across the surface for a smooth finish.

          Chill to Set: Cover the baking dish with plastic wrap or aluminum foil and refrigerate for a minimum of 4 hours, or until the squares are firm to the touch and well set.
