For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz (450g) cream cheese, softened to room temperature

¾ cup powdered sugar

1 tsp vanilla extract

2 cups heavy whipping cream

1 cup mixed berries (strawberries, blueberries, raspberries), chopped if large

For the berry topping:

1 cup mixed fresh berries (as above)

2 tbsp granulated sugar

1 tbsp lemon juice

Prepare the Crust:

    In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the crumbs are fully coated and the mixture resembles damp sand. Transfer the mixture into a lined 9x9-inch (or equivalent) baking pan. Use the flat side of a measuring cup or your fingers to press the mixture evenly into the bottom of the pan. Make sure it’s tightly packed for stability. Refrigerate while you prepare the filling.

      Make the Cheesecake Filling:

        In a large mixing bowl, use an electric mixer to beat the softened cream cheese and powdered sugar until the mixture is smooth and creamy, about 2-3 minutes. Add the vanilla extract and blend until fully incorporated.

          Whip the Cream:

            In a separate bowl, pour in the heavy whipping cream and beat with an electric mixer until stiff peaks form, which should take around 3-5 minutes. Gently fold the whipped cream into the cream cheese mixture, incorporating it gradually to maintain a light and airy texture.

              Combine with Berries:

                Carefully fold the mixed berries into the cheesecake filling, saving a handful for the topping. Pour the cheesecake filling over the prepared crust, using a spatula to spread it evenly across the surface.

                  Chill:

                    Cover the pan tightly with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or until fully set. For the best texture, consider chilling overnight.
