Ingredients

1 lb ground beef

8 oz mushrooms, sliced (button or cremini work well)

1 medium onion, finely diced

3 cloves garlic, minced

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup Swiss cheese, shredded (set aside a handful for topping)

1 cup beef broth (low-sodium recommended)

1 tablespoon olive oil

1 teaspoon dried thyme

1 cup cooked egg noodles (or substitute with your favorite pasta)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C), ensuring it's ready for the casserole later.

Sauté the Aromatics: In a spacious skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for approximately 3-4 minutes until it becomes translucent. Incorporate the minced garlic and sauté for an additional 30 seconds, absorbing the delicious aroma.

Brown the Ground Beef: Next, introduce the ground beef to the skillet. Use a spatula to break it up as it cooks. Sauté until fully browned and no longer pink, then drain any excess fat from the pan.

Cook the Mushrooms: Stir in the sliced mushrooms along with the Worcestershire sauce, Dijon mustard, salt, black pepper, and dried thyme. Cook this mixture for about 5-7 minutes, stirring occasionally, until the mushrooms are nicely tender and flavorful.

Mix it All Together: In a large mixing bowl, combine the cooked egg noodles with the beef and mushroom mixture. Pour in the beef broth and half of the shredded Swiss cheese, mixing thoroughly until the noodles are well coated.

Assemble the Casserole: Transfer the combined mixture into a greased 9x13-inch baking dish, spreading it out evenly. Sprinkle the reserved Swiss cheese on top for a deliciously cheesy finish.

Bake to Perfection: Place the baking dish in the preheated oven. Bake for 25-30 minutes or until the cheese is bubbling and has turned a lovely golden brown.

Garnish and Serve: Once baked, remove the casserole from the oven and allow it to cool for a few minutes to set. Just before serving, garnish generously with fresh chopped parsley for that bright, flavorful finish.

Presentation Tips: Serve directly from the baking dish or portion it out onto plates. You can elevate the presentation by adding a sprig of fresh parsley atop each serving for a pop of color.
