Mini Zucchini Ricotta Pizza Rolls

2 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup marinara sauce (plus more for dipping)

1 tablespoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 package of pre-made pizza dough (store-bought or homemade)

Olive oil for brushing

Fresh basil leaves for garnishing (optional)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Meanwhile, line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.

    Prepare the Zucchini: Rinse the zucchinis under cold water, then slice them lengthwise into thin strips, approximately 1/4 inch thick. Place the zucchini slices on a clean kitchen towel, lightly sprinkle with salt, and allow them to rest for 10-15 minutes. This step helps to draw out excess moisture, which will prevent the rolls from becoming soggy. After resting, use another kitchen towel to pat the zucchini strips dry.

      Make the Ricotta Filling: In a mixing bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, Italian seasoning, garlic powder, onion powder, and a pinch of salt and pepper. Mix all the ingredients thoroughly until well combined and creamy.

        Roll Out the Pizza Dough: On a lightly floured surface, roll out the pizza dough into a rectangle about 1/4 inch thick. Use a sharp knife or a pizza cutter to cut the dough into strips that are approximately 2-3 inches wide.

          Assemble the Rolls: Take one strip of pizza dough and spread a thin layer of marinara sauce on top. Lay a few zucchini strips horizontally across the dough, then add a generous dollop of the ricotta mixture over the zucchini. Carefully roll up the dough, starting from one end, to form a tight cylinder. Place each roll seam-side down on the prepared baking sheet.
