1 teaspoon salt

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/2 teaspoon black pepper

Prepare the Zucchini: In a large mixing bowl, combine the grated zucchinis with the teaspoon of salt. Allow this mixture to sit for about 10 to 15 minutes. This process will help draw out excess moisture from the zucchinis. Afterward, using a clean kitchen towel or cheesecloth, firmly squeeze the zucchinis to remove as much liquid as possible. This step is crucial for achieving crispy waffles!

    Make the Batter: In the same bowl with the drained zucchini, add in the flour, grated Parmesan cheese, shredded mozzarella, beaten eggs, chopped basil, garlic powder, and black pepper. Stir well until all the ingredients are thoroughly combined. The batter should be thick yet pourable, similar to pancake batter.
