2 medium sweet potatoes

4 large eggs

1/2 cup shredded sharp cheddar cheese

Salt and pepper, to taste

Prepare Sweet Potatoes: Begin by preheating your oven to 400°F (200°C). Rinse the sweet potatoes and then pierce each one several times with a fork to allow steam to escape during baking. Wrap each potato in aluminum foil and place them on a baking tray. Bake for approximately 45-60 minutes until they are tender and easily pierced with a fork. Once done, allow them to cool slightly before handling.

    Make Sweet Potato Nests: After the sweet potatoes have cooled enough to touch, carefully cut each potato in half lengthwise. Using a spoon, scoop out a small portion of the flesh from the center of each half to create a nest-like indentation. Be sure to leave some flesh along the edges for stability. (You can save the scooped-out sweet potato flesh for other dishes, such as smoothies or mashed sweet potatoes.)

      Season and Fill: In a mixing bowl, combine the shredded cheddar cheese, diced bell pepper, chopped green onions, garlic powder, paprika, and a pinch of salt and pepper. Stir the mixture until all ingredients are evenly coated. Generously spoon this colorful filling into the cavity of each sweet potato half.

        Add Eggs: Carefully crack an egg into each sweet potato nest, letting the yolk and white settle atop the cheese and vegetable mixture. If you prefer a scrambled texture, you can lightly beat the eggs in a separate bowl and pour them into the nests.
